Quick and Easy Pork Chop Dinner

Quick and easy pork chop dinner using boneless, center cut pork chops and a can of Campbell’s Golden Mushroom Soup.

It’s quick. It’s easy. It’s tender and delicious.

Serve this meal over a pile of egg noodles for a wonderful comfort meal for a cold, snowy night

Simple Ingredients for a Simple Meal

I start with 4, 1 inch thick center cut pork chops.

I love to use 4C breadcrumbs. The seasoning is always “just right” for my family. 1 cup of breadcrumbs with 1/4 cup of flour blended together.

1 egg with a half cup of milk whisked together.

I usually use 2 pie plates – large enough to handle the ingredients and fit perfectly in the dishwasher for a quick cleanup.

Take a pork chop and dip in egg mixture, sure to get both sides of the pork chop wet. Next you will want to dip in breadcrumb mixture. Repeat this process again with the same porkchop – trust me.

Heat 2-3 tbsp of olive oil in a large frying pan. Cook each pork chop 4 -5 minutes each side to get a nice deep brown on the breading.

While the chops are frying, take your can of soup, and pour into a 4 cup #pyrex dish. You can fill the can with water and whisk into soup. Or you can use a white wine or a 50/50 mixture.

Once both sides of the chops have been browned, you then turn the heat down on the stove. SLOWLY pour the soup mixture into the frying pan avoiding pouring directly on top of the pork chops themselves. This is when the lovely magic happens.

Put a lid on the pan, turn the heat way down low and let them sit.

OK – now you can eat! LOL! I usually let them simmer between and hour and a half to 2 hours. In the last half hour of simmering, I will start a pot of salted water for the egg noodles.

Once the noodles are done, put a pile of noodles on the plate, put a pork chop on top, then some gravy all around and VOILA! Dinner is served!! And this is where I suck – I ALWAYS forget to take a picture of the plate!!!!!
